Abula:: Amala With Ewedu, Party Beef Stew And Gbegiri.







Gbegiri>>>Serves 3-4

Ingredients.

Reg' naija beans or black eye peas
Salt
Black pepper
1 habanero
1 Fresh Tomato
1 Onion
1 tatashe or Red Bell pepper
Maggi (optional)
Palm Oil
Beef stock of water

.......

Soak beans overnight and remove skin.
Boil beans in salted water or beef stock.
Add palm oil (feel free to pre-heat your palm oil) and blended mixture of habanero, onions, red bell pepper and fresh tomato.
Adjust seasoning or add maggi.
Cook till very tender/completely broken down (mushy). Proceed from here by mashing with hand held fine potato smasher till smoot, or blend in a blender to get a smoother texture or finish.

(add water or stock according to desired consistency)


PS: Cook with neckbones to add extra flavor and dimension.

View Post Crepes Suzette with Vanilla Ice Cream and Home Made Orange Butter Sauce.

2 cups milk
2 eggs
1 1/2 cups all-purpose flour
Pinch salt
1 stick (4 ounces) unsalted butter, melted
Orange butter, recipe follows
1 tablespoon butter to brush the crepe pan

Preheat oven to 350 degrees F.

Add milk and eggs to blender and combine. Add the flour 1/2 a cup at a time, blending after each addition to ensure there are no lumps. Add pinch of salt and melted butter then blend for 30 seconds until you achieve a smooth, silky consistency. Set aside in refrigerator for at least 30 minutes to rest. While it rests make the orange butter sauce.

Dip a piece of kitchen paper in butter and grease a small frying pan. Ladle a spoonful of batter into the pan. With a flick of the wrist swivel the pan in order to get a nice even covering all over. A good crepe should be paper- thin. Cook on a high heat and flip it over when you see the edge turning golden brown. Remove crepes from pan and fold in half and press into a muffin tray to form little cup shapes. Bake in hot oven for 10 to 12 minutes until slightly crispy and brown around the edges, the middle should remain spongy and light.

Orange Butter:
1 stick unsalted butter
1 cup granulated sugar
1 cup freshly squeezed orange juice
1 teaspoon orange zest


Combine the butter, sugar, citrus juices, and zest to a small saucepan and cook for about 10 minutes until it caramelizes. It should be a golden color. Remove from heat, add the Grand Marnier, return to the heat and continue to whisk and reduce until syrupy-about 10 minutes. When done, set to the side.

To assemble, place crepe "cup" in the center of plate and place a scoop of vanilla ice cream in the cup. Drizzle with the orange butter sauce.

Ingredients::

1 pound shrimp

4 tbs Olive Oil

Green and Red bell pepper

Onions

Garlic

Black pepper

Salt

Italian seasoning

Half can tomato sauce
................


Cut and prep peppers, garlic as desired

lightly toss in olive

and shrimp

add tomato sauce

add seasoning (salt, black pepper and italian seasoning)

toss for 1-2 mins (medium heat)

eat with fried plantain and white rice...

Boiled Yam With Fried Stew (Obe Din Din)

Yam Porridge



This is basically a one pot dish...


Ingredients:::

Yam

Dried fish or Beef (Optional)

Onions

Tomato Sauce

Garlic

Fresh Tomato

Salt

Black pepper

Water or stock



Sweat cut or diced Onions, tomato and garlic in olive oil for 2 mins (mid heat)

Add dried fish

Add tomato sauce

Add peeled and cut yam

Add water or stock (not too much, just enough to cover the yam)

Add seasoning


Cover and let simmer for 35-45mins or till done

Sweet Garlic, Herbs And Tomato Baked Chicken....







Whole Chicken
Rosemary
Thyme
Basil
Oregano
Black Pepper
Tomato
Garlic
Onion
Celery
Kosher Salt
Olive Oil



Combine/Mix all Ingredients ('xcept chicken) with six tbs Olive Oil and quarter cup orange Juice.

Clean and prep chicken

Generously rub/marinade chicken with mixture and lets sit for 45 mins

Set chicken in a baking pan

Loosely cover chicken with aluminum foil

Bake for 40 mins @ 375-400s

Remove foil and continue baking for another 15 - 20 mins

Remove and let sit for 10-15 mins before cutting.........

Serve with Chardonnay if you drink

My style is very contemporary butflavor and looks remains the same..if not better sef.....


Meat/Cut to preference. (prep/boil and fry)
Shrimp
Smoked Fish (Slightly boil with meat to enhance flavor)
Stock Fish (prep and boil to soften)
Tomato
Onion
Salt
Black pepper
Garlic
Red bell pepper
Habanero or Scotch bonnet
Olive Oil
Palm Oil
Spinach (Cut to preference)
Maggi (Optional/MSG content)
Salt

Fry tomato, onion, garlic and peppers in mixture of Olive and or Palm oil
Add tomato sauce and paste
Add the meats including fish/stock fish and shrimp
Add stock (just a little, maybe half a cup because you're still gonna have to get rd of a lot of fluid...)
Add spinach or your choice of veggie (Add Egusi right here if you're doing Egusi)
Adjust seasoning
Simmer till done/90-95% evaporation


Feel free to add subtract ingredients as desired....
