Egusi with bitter leaf.

Ingredients-
Your choice of Beef, chicken or turkey (Prepped)
1/2 cup Egusi
Diced tomato
Dice onion Onion
Onion powder
Chipotle powder
Salt
Black pepper
Chopped garlic
Diced red bell pepper
Habanero or Scotch bonnet
Bitter leaf Soaked and drained)
Olive Oil
Palm Oil
Maggi (Optional)
Salt
1 cup water
Method-
Fry tomato, onion, garlic and peppers in mixture of Olive and or Palm oil for 2-3 minutes
Add tomato sauce and paste or blended peppers, habanero, onions and tomato.
Add your meat
Add onion and chipotle powder, salt, black pepper and or Maggi
Add 1 cup water or stock
Add soaked and drained bitter leaf
Adjust seasoning
Simmer cook for 10 - 15 minutes or till done
Guacamole Supreme
Shrimp Fetuccini

1 lb fettuccine (Boiled in salted water)
1 lb shrimp (Cleaned, deveined and boiled)
1 fresh tomato (Diced)
1 tbs diced onion
1 tsp chopped garlic
1 tbs chopped parsley
1 tsp shopped fresh basil
1 tbs tomato sauce
Salt and pepper to taste
3 tbs olive oil
1 tbs grated picorino or parmesan cheese
Slightly fry onion, garlic, tomato sauce and fresh tomato in olive oil for 2 minutes at low heat
Add boiled shrimp and boiled fettuccine
Toss together with chopped basil and cheese
Remove from heat and add mix in 1 tbs olive oil before serving

Shrimp and fish gumbo.
Ingredients-
1 lb fresh fish steaks
1 lb deveined large shrimp
3 tbs flour
1/2 cup chopped green bell pepper
1/4 chopped celery
1 tbs chopped green onion
2 tsp chopped garlic
2 tsp chopped parsley
1/4 cup diced fresh tomato
Cajun seasoning
Salt and black pepper to taste
1/4 cup olive oil
1 tbs butter
Method-
Fry onions and garlic in olive oil and butter
Add flour and cook till dark brown
Add diced tomato, parsley, green onion, celery and mix in gently
Add 3 cups of water or beef stock
Season with salt, black pepper and Cajun seasoning
let cook at ow heat for 5-8 minutes
Add shrimp and fish
Adjust seasoning and let simmer for ten minutes
let rest for 5-10 minutes before serving

Stewed turkey necks.
Ingredients-
1 lb turkey necks
1 tbs tomato paste
1/2 cup diced carrots
1/2 diced celery
2 tsp chopped garlic
1 tbs Italian seasoning
1 tbs flour
3 tbs olive oil
1 tbs chopped parsley
Salt and black pepper to taste
Method-
Fry flour in a pot with olive oil till slightly brown
Add turkey necks and the rest of the ingredients
Tate and adjust seasoning as needed
Cover and cook in a heated oven @ 400 degrees for 2 hrs or till tender.
BBQ chicken wings.
So, I drove to Ruddy's off I45 in Webster to get some BBQ sauce for my BBQ wings, the sauce is very good of course, the BBQ meats are great too, but definitely not the best around, it's a little too pricey too. Well, the place was packed as usual regardless.





Ingredients-
2 lbs chicken wings
Tony Chacheres Original Creole Seasoning (Or just salt)
Frying oil
BBQ sauce
Method-
Season and fry wings @ 375 degrees
Remove and drain when done
Toss fried chicken wings in a bowl with BBQ sauce
Let rest for 2-3 minutes before serving.

Breakfast Hash.
Ingredients-
Dice skinned potatoes
Diced cut of beef
Salt
Black pepper
Fresh Eggs
Method-
Season and grill diced potato and beef in a cast iron (Any kind of skillet or frying pan is OK) heated skillet
When done and crispy, make a little room in the middle of grilled ash and beef
Crack open 2 fresh eggs and gently drop in the middle
Place in a heated oven to cook eggs sunny side or as desired.

Butter beans with smoked turkey legs.
Baked mixed bean soup and chicken.
Ingredients-
2 lb Mixed beans
1 whole chicken (Halfed)
Chopped celery
Chopped carrots
Chopped garlic
Chopped onions
1 inch strand lemon grass
Fajita seasoning
Cajun seasoning
Italian seasoning
Half cup diced tomato
Salt
Black pepper
2 tablespoon olive oil
Method-
Season chicken with Cajun and fajita seasoning and back in a heated oven till half way done. Remove and set aside. Also save drippings.
Saute chopped vegetables in a skillet with olive oil for 3-4 minutes and set aside.
Bring mix beans to a boil in salted water with the water just slightly above beans level.
Add the rest of the ingredients
Adjust seasoning
Cover and place in a heated oven and let bake for 2-3 hrs @ 400-430 degrees
Remove from oven and place halfed baked chicken in the middle of baked beans
Return to the oven and bake for another 45 minutes
Remove and let rest before serving.

Unauthorized Use of Photos
I'm so fed up cos this is really getting out of hand. I've pleaded with many folks especially many Nigerian businesses to quit using or if maybe even stealing my pictures . I'm a chef, a food photographer and I live off my work. I'm not making a living off your businesses or getting any kind of compensation for all the stolen and bastardized pictures. This is theft and dishonest business practice. Restaurants and other food businesses hire me to design menus and recipes for them and I don't know why it's too hard for these businesses to do same and pay a fee to promote their businesses instead of stealing and making a buck off other people's hard work.
For what it's worth, I spend countless hours and sometimes even days working on a single dish from coming up with ideas to doing groceries, designing the dish, cooking, plating and styling, taking pictures, editing and typing up recipes.
I do daylight photography so my pictures are natural and all the elements are out there in the open with no studio tricks and umbrella comforts and this is what many of my clients like about my work. I even deal with and keep up with the weather daily like the weatherman. I do enjoy what I do, but It is hard work just like the average joe's.
The link below is a good example. All the pictures are not only mine, they manipulated my name off the pictures. This is just too crooked and dishonest.

Shrimp Paella With Fried Plantain.
Ingredients-
Deveined large shrimp -1lbs
Parboiled rice 1lbs
Turmeric -1 or 2 tsp
Achiote powder 1 or 2 tsp
Onions - Chopped
Fresh Tomato - Diced
Garlic - Chopped
Chipotle powder - 1 or 1/2 tsp
Italian Seasoning - 1tsp
Crushed chili pepper 1-2 tsp
Olive Oil - 4tbs
Butter - One leveled tbs
Salt
Black pepper
Water or stock
Method-
Heat up your olive oil and butter @ med heat
Add chopped onion, garlic, tomato, turmeric, celery, chipotle, achiote and let fry for 1 min
Add rice and water/chicken stock (measure your water just like regular boiled rice)
Add Italian seasoning, onion powder, salt and black pepper
Taste and adjust seasoning
Add shrimp
Place pot in the oven and let cook @ 350dgrs for 15 mins or till done
